Changes in weather, changes in color
As the weather changes in late fall, interesting color changes also occur in many of the peppers we grow. Some years this change in more pronounced than others. Why does this occur, I wondered? Well, this generally happens when the pepper is nearing the end of it ripening process. It occurs when the chlorophyll breaks down, revealing the underlying color (yellow, red, black or orange) as it prepares for the colder temperatures--it is an acceleration of the natural ripening process. Nature is so cool.
