Helping to Harvest

Early-mid June is squash harvesting season in Mississippi. Sometimes you get lucky and someone has a bumper crop of squash they wish to share. We always say YES to those kind souls and find a use for them after. For squash, though, it is always squash relish. Sugary sweet and savory, vinegary brine over onions, green and red bell pepper (a hot pepper if you wish) and squash is exceptional.

Come winter, it is the perfect cheery Christmas gift that takes one back to the joyous period of cool nights and warming days of spring.
