
The Vigilant Canning Scavenger

Man, do I ever love scavenging for stuff to can. In late May to early June, Mississippians keep their eyes peeled for blackberries. Here they grow wild in even urban areas. I was incredibly joyous when I came across this berry haul between parking lots. Shamelessly, I picked those berries in front of all who passed, rear end to the sun.
Determined to use less sugar, I complemented the sweetness of the berries with some nice acid from a lime with an extra punch from the zest. Untraditional, yes: delicious, it sure was. In our family, we often jokingly say, "Best batch ever," but this one lived up to the hype! That was my Father's Day gift that year and homemade always hits big with Ed and Bob. Mike and I use our entire family and friends as our de facto taste testers. Thanks, y'all, for all of the support.
